The Terry M Experience

Last night my boyfriend and I were lucky enough to go for dinner at Terry M.

Terry M is a 3 AA Rosette fine dining restaurant situated within the Celtic Manor Resort, and is something truly special that can be experienced by guests and non-residents alike.


Upon arrival you can enjoy a pre-dinner cocktail and canapés in their very own private lounge, or if the weather is being kind head out to the rooftop terrace and savour the last balmy evenings of summer in a relaxed, understated atmosphere.



There are two menu options to choose from for dinner, a 3 course à la carte menu, or a 6 course tasting menu. Something I’d highly recommend for couples or groups looking for a truly unforgettable evening! During this visit my partner and I decided to go for the three course à la carte menu as we didn’t feel like we could quite take on the challenge of six courses menu just yet. We thought we’d save that for our next visit.

All of Terry M’s intricate and seasonal dishes have been lovingly created by Head Chef Tim McDougall. Quality is key when sourcing fresh produce as well as keeping with the Best of British feel.


I went for the Pressed Duck Liver, with Port Wine, Medjool Dates, and homemade Toasted Brioche to start which was heavenly, and my partner went for the Wild Sea Bass, with Old Winchester Cheese Sauce, Open Ravioli of Leeks and Romanesco. Which he said was incredible also.


For our mains we chose the Fillet of Welsh Beef, Braised Flat Rib, Milk and Butter Mash, Bone Marrow and Morel Jus, with Cavolo Nero and the Best End of Welsh Spring Lamb, Sautéed Offal, Tamarind Chutney, Chickpea Wafer, and Cottage Cheese. These dishes were generous portions for a fine dining restaurant and they left us feeling more than satisfied.


Lastly for dessert I chose the Buttered Cherries, Cocoa and Avocado Crème, Pistachio Sponge, with Cream Cheese Ice Cream. The combination of flavours and textures in this dish were so indulgent I couldn’t get enough! My partner decided on the Chocolate Fondant Mousse, with Basil and White Chocolate Ice Cream which would have been my second choice if I could have had the two.


The service we received at Terry M was friendly, welcoming and attentive. Staff are more than happy to recommend their favourite dishes, or what wine would best accompany your choice.

Terry M has all the trimmings and extras you would expect from a fine dining restaurant, but with a relaxed and comfortable atmosphere.

I honestly believe that sharing a fabulous meal and great wine is one of life’s little pleasures, and I can assure you that Terry M will create an experience you won’t forget leaving you with memories long after dessert has been served.
